The Details This co-fermented coffee is grown at about 4,600 ft by producer Juan David Puerta at Finca La Sirena. Ripe coffee cherries are harvested and rested for 24 hours before being floated to remove defects and pulped into fermentation tanks. The coffee undergoes a 48-hour co-fermentation with cantaloupe, followed by 2 days of patio drying and finishing in mechanical dryers to achieve ideal moisture levels and cup quality.
